Marmalade Dressing

I recently attended a birthday party of an old high school pal. Perhaps I shouldn't say old, because that dates myself. But he's been a friend for many many years. The party included a beautiful supper with the most wonderful homemade food I can remember having. I had this salad dressing (below) over the most beautifully tossed salad I have ever laid my eyes on (lettuce, colorful sweet peppers, shaved carrots and orange slices) . What was a teat for my eyes, was also one for my tastebuds! This dressing was so fresh tasting and so different. I had to have the recipe.
Imagine my surprise when I was told it was basically marmalade! I would have never thought it to have marmalade, though I couldn't tell what it was made of. All I could describe it as was fresh and sooo light. I inquired about the recipe from my dinner host and she shared this with me.

Marmalade Dressing
rice vinegar
olive oil
salt & pepper
orange marmalade


Combine ingredients. Toss into salad to dress

Marmalade Dressing


Ingredients:
1/2 cup orange marmalade
1/4 cup raspberry vinegar
1 to 2 tablespoons seeded, very finely minced jalapeno pepper
1 to 2 tablespoons finely chopped fresh cilantro
mixed salad greens

Preparation:
In a small bowl, whisk together the marmalade, vinegar, minced pepper, and cilantro. Toss with mixed greens.
Makes about 1 cup
