Weight Watchers Chili



This past weekend, as we walked the woods in search for greenery for our Christmas boughs (fa la la!) my cousin Elaine had her soup pot simmering with goodness. It was perfect to come home to a warm pot of soup, after walking in the cold rain. This recipe is for weight watchers chili. Don't let the name fool you, there is alot of flavor and heartiness to this soup. And, if you are a vegetarian, you can leave out the turkey breast and use tomato juice instead of beef broth. though, I do not know what that would do to the points, for anyone keeping score. Elaine made me a pot of the vegetarian and she added a packet of dry Italian dressing seasoning to it. It was wonderful!




Weight Watchers Chili

1/2 lb. ground lean turkey breast
1 C diced onions
28 oz can diced tomatoes
1 C celery
1 bell pepper, diced
1 squash diced
1 zucchini, diced
15 oz. can black beans, undrained
1 package dry chili mix
12 oz. beef broth

Brown turkey in soup pot. Add remaining ingredients. Simmer 30-40 minutes or until vegetables are tender. Makes 15, 1cup servings. 1 point per serving.
Serve with some good ole' cornbread and it's a meal to remember!
