Two Salads that Eat like a Dessert: Pineapple Walnut Salad & Cooa Cola Salad

I wrote on my blog, Tales from Bloggeritaville of the menu that we will have on Thanksgiving this year. We prefer traditional foods that we have from year to year. No one likes much change, for there will be negative feedback if there is any deviation from the menu.

Well, Polly & Tammy, I am here to tell you. These salads are very tasty, and while called a salad, are more like a dessert. I have seen both of these salads served in tea rooms. I have also had the Pineapple Salad at Lambert's in Foley, Alabama. I highly recommend it there should you be visiting the coast. Both salads are very similar with just a few varying ingredients. I personally am a big fan of the Pineapple Walnut Salad.


Pineapple Walnut Salad (the recipe I use)
1 pkg. pistachio pudding
1 sm. can crushed pineapple
1 c. whipping cream, whipped
1 c. miniature marshmallows
1/2 c. chopped nuts


Drain juice off pineapple and finish cup with water. Heat water/pineapple juice. Pour over Jello. When Jello begins to get thicker, put other ingredients in mixture and pour in pan.

a similar recipe for this salad:
Lime Salad

7 oz. 7 up
1/4 lb.(2 1/2 c.) tiny marshmallows
3 oz. lime gelatin
6 oz. cream cheese, softened
Juice of l small lemon
10 drops green food coloring
20 oz. crushed pineapple and juice
3/4 c. chopped nuts
8 oz. whipped topping(or l cup whipping cream, whipped)

Combine beverage and marshmallows in top of double boiler over boiling water
and heat till marshmallows are dissolved. Add gelatin and stir to dissolve.
Add cream cheese and beat with electric beater til smooth. Add lemon juice,
food coloring, and pineapple. Chill till slightly thickened(approx. 1/2 hour,
can be more or less). Fold in nuts and whipped cream. Chill till firm.

COCA COLA SALAD

2 c. liquid
2 (3 oz.) pkg. cherry Jello
2 sm. bottles Coke
1 med. can crushed pineapple
1 lb. can black cherries
1 c. pecans

Drain juice from cherries and pineapple for liquid if necessary add water to make 2 cups. Heat and dissolve Jello. Then add Cokes, pineapple and cherries which have been cut in pieces. Chill and serve.

I sooo want to try the coca cola salad...I have made choc. coca cola cake and it was delish. Happy Thanksgiving toots. cherry
