Cinnamon-Coffee Pecans



Pecans are the perfect snack. Wrapped in it's own gift wrap, inside is the gift. SO yummy! And this time of year, they are in season. Perfect for pies and cakes, and all sorts of wonderful desserts. But they are also nice to enjoy right out of the shell. This recipe is just that, with a little pizazz. And it also makes a nice gift for neighbors and friends. Package up some in a cute "takeout" style box or a small mason jar, throw in some packages of tea of coffee or cocoa and it is perfect!

Cinnamon-Coffee Pecans

3 Cups pecan halves
1/2 Cup Sugar
1/4 Cup water
1 Tbsp instant coffee granules
1 tsp ground cinnamon
dash of salt

Spread pecans on an ungreased jelly roll pan. Bake at 350 for 10 minutes, stirring after 5 minutes. Combine sugar and next four ingredients. Cook over medium-low heat until sugar and coffee dissolve, stirring often. Add pecans and cook 3 minutes, stirring constantly. Remove from heat. Spread pecans in an ungreased pan. Bake at 300 degrees for 15 minute, stirring every 5 minutes. Cool completely:store in an airtight container.
