Pizza Cups


So, it is two days before Christmas and much to be done. Who wants to add another thing to the list of to do's with trying to prepare a big supper? I had spaghetti last night, and have some leftovers. But, to mix it up a bit, and allow everyone to feel as though they are not eating leftovers, this is a great recipe. You can make it as your own.
Pizza Cups (Basic Recipe)
1 lb. ground beef, cooked & drained
1 can (10) biscuits
pizza sauce (or left over spaghetti sauce, or taco sauce, or sloppy joe sauce.etc.)
mozzarella cheese (or whatever kind you prefer)
Brown beef, drain. Add pizza sauce. In a greased muffin tin, spread canned biscuit dough to form a cup ( I flatten the biscuit into a bog circle then spread it into the tin). Fill with ground beef and sauce. Top with cheese. Bake according to directions on biscuit tube.
As I mentioned, I had left over spaghetti sauce. I spooned that into the biscuits cups. I have also done this with left over sloppy joe filling (cheddar cheese) we well as chili (mexican cheese). Substitute chopped pepperoni or ham for the ground beef, or add it all together. Add vegetables if you want. I would imagine that spinach and cream cheese mixture with garlic and seasonings would be tasty. Chopped chicken mixed with salsa and topped with cheese...Diced boneless buffalo wings topped with cheddar or blue cheese.....The possibilities are endless. It is perfect for kids! Perfect for parties! For supper, add a green salad and a vegetable and you are good to go.
These cups are perfectly good. And quick, easy and cheap. And did I mention, oh, so good?
