Leigh's Taco Soup

This soup is perfect on a cold winter day! It's filling and festive. My kids love to top it off with their own choices of toppings that consist of any variety of sour cream, cheeses, olives, taco sauce, jalapenos and chips.

Leigh's Taco Soup

1 pound ground beef
1 large onion, chopped,
1 xlarge can tomato sauce
1 large can diced Mexican tomato
1 can rotel with chili's
1 large can corn with liquid
1 can hot chili beans
1 pkg taco seasoning
1 pkg ranch seasoning
shredded cheese
sour cream
1 C water or beef broth

Dice onion and brown with meat. Drain. Add other ingredients (except cheese and sour cream). Simmer several hours. Top with cheese and sour cream, olives and chips. Enjoy!
