This soup was served to me at a friend’s house. It is a rich soup that guarantees compliments. I gave the recipe to my friend, Janet, who loved it too. She is kind enough to share a bowl with me every time she makes it.
Potato Soup
8 c chopped potatoes
3-4 chicken bouillon cubes
1 C chipped carrots
1 C chipped carrots
2 ½ C water
½ C chopped onions
½ C chopped onions
1 tsp parsley flakes
1C chopped celery
1C chopped celery
¾ tsp pepper
1 tsp. salt
Mix all ingredients together in a blender. Transfer to soup pot. While the vegetable mixture is still cold, add 4 c flour, 3 C milk. Heat on medium, eliminating lumps. Add 1 ½ C Velvetta cheese. Stir until melted.
