This is one of my favorite soup recipes. It is a rich soup it guarantees compliments. Serve with a slice of southern style homemade cornbread and it will warm any soul in the midst of winter.
Potato Soup
8 c chopped potatoes
3-4 chicken bouillon cubes
1 C chopped carrots
2 ½ C water
½ C chopped onions
1 tsp parsley flakes
1C chopped celery
¾ tsp pepper
1 tsp. salt
Mix all vegetable ingredients together in a blender. Transfer to soup pot. While the vegetable mixture is still cold, add 4 c flour, 3 C milk. Heat on medium, eliminating lumps. Add remaining liquid and seasoning. Add 1 ½ C Velvetta cheese. Stir until melted.
