Asparagus Salad with Walnut Oil Vinegarette


My Dad has really come into his own since his retirement over 2 years ago. He has discovered another side to himself, as have we, one we never knew existed. He has become obsessed with the food channel and has even begun cooking, not simple things, but some "really fancy stuff" as my mother likes to say. He has even started to develop his own recipes. It is really an amazing thing to watch, that this man only a few short years ago couldn't cook more than a hot dog, or at the most man a grill, has taken to this and is now cooking meals for my mom, after she did it for over 30 years. One day, while visiting with them, my parents had some left overs in the refrigerator that Dad had prepared the night before for supper. Mom pulled them out for me to try. They were delicious. Below is one of them. It is a fabulous light dish, packed with flavor. I think this dish came from the Food Channel. YUM!

Asparagus Salad with Walnut Oil Vinaigrette

1/4 cup white wine vinegar
1 tablespoon minced shallot
2 teaspoons Dijon mustard
3/4 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 cup vegetable oil
1/4 cup walnut oil
2 pounds asparagus, trimmed and steamed until just tender
1/3 cup toasted, chopped walnuts 1 tablespoon
chopped fresh parsley leaves

Salt and freshly ground black pepper


In a large bowl whisk together the vinegar, shallot, mustard, salt and pepper. While continuing to whisk, add the vegetable oil in a very thin stream, whisking constantly. Whisk in the walnut oil. Place asparagus on platter and pour dressing over asparagus. Garnish with walnuts and parsley. Taste and adjust seasoning if necessary. Serve immediately.

That is really beautiful. With God's grace, I hope I can continue to develop new interests as I move through the years.

The vinaigrette sounds tasty. I completely understand his fascination with the Food Channel!
