Last night for Supper I made Fajitas, only this time I simplified it.
Jose Goes to Paris:
I bought a London Broil and marinated it overnight in salsa. The next morning I put it into the crock pot with the remaining salsa, and some minced garlic, cumin, an envelope of taco seasoning and 1/2 cup of water. I slowed cooked it all day until it shreds easily. You could easily use chicken or the traditional steak strips, but to keep it from drying out and disintegrating, I used this meat.
Sauteed Vegetables
I like vegetables, the rest of the family does not so,in a skillet I heat some olive oil and throw in some sliced sweet onion, yellow and orange peppers and minced garlic (whatever you like, add mushrooms, bell pepper, etc.). I saute the vegetables until the onions are translucent and peppers are soft. The, I add a dry mix envelope of fajita seasoning and 1/4 cup water. Turn heat to low to allow the water to be absorbed some and sauce thicken. This is so delicious to me!!! And soooooo low fat! Of course you could also do the vegetables in the slow cooker, but I prefer to saute them.
After the vegetable are done, add meat or vegetables (or both ) to soft tortilla shells, we top with fat free sour cream and pepper jack cheese.
We also top our fajitas with with my homemade salsa...ummmmhummm!
These recipes are Delicious and EASY -you'll supper in a flash. Using a hot cooker, your meal is ready when you get home.
I wish I could show you pictures of how good they look! They taste even better.

Aww, Abbey! That is so sweet. I appreicate that. Now if I can convince the husband and kids. LOL! They make take issue.....
If I can be half the mom my mom is to me and my bro then I have doen ok. I have a long way to go though.....I have my days, many of them, beleive me.
